Patty Melt

Ingredients

2 slices La Brea Bakery Rye Loaf
3 teaspoons and 1 tablespoon butter divided 
2 slices Swiss cheese
Salt
Fresh pepper
4 ounces freshly ground beef, formed into a patty (roughly the size and shape of a slice bread)
1 cup yellow onion cut in half and sliced thin
1 tablespoon water

Preparation
  1. In a small saute pan or skillet, melt 1 teaspoon butter over medium heat until foaming. Add both slices of bread and cook until golden brown and remove from the pan and place cooked side up on a plate. Add a slice of cheese to each piece of bread and let rest.
  2. Using the same pan, place over high heat and add 1 teaspoon butter. Season burger patty with salt and pepper and when butter is melted, add meat to pan and cook for 2-3 minutes.  Flip over, reduce heat to medium and cook for another 3 minutes or to your desired temperature. Remove and set aside.
  3. Using the same pan over medium heat, add onions, 1 teaspoon butter and the water.  Let cook while scraping bites of brown crust from the bottom of the pan.  When soft, remove. 
  4. To build the sandwich, first add the onions evenly to each slice of bread on top of the cheese.  Add the cooked burger patty and close the sandwich.  Add 1 tablespoon butter to the pan and when melted place the sandwich down and let it cook for 2-3 minutes until brown. Flip over and cook the other side the same way until golden brown and cheese is melted.  Remove and serve warm.
