Fortuna Wheat Bread

A hearth-baked bread loaf, made with the original 1989 La Brea Bakery starter, single-origin Fortuna wheat flour and rye flour. The artisan bread is golden brown in color, with a crispy crust and soft interior.  This loaf has levels of texture from the diverse grain mix, including a crispy crust and a mixed crumb from the cracked wheat berries. Sweet and sour pre-ferments balance each other perfectly, with a tangy note from the cracked berry and subtle, natural sweetness from raisin juice.
