A hearth-baked baguette made with single-origin, heirloom Fortuna wheat flour from Big Sky Country, Montana.  The hearth-baked artisan bread develops a golden brown color, with a single score.  The interior is hearty and chewy with an open cell structure typical of well-fermented bread doughs.  The flavor profile is distinctly sour on the finish, with caramelized and sourdough aromatic notes.

Genetically Modified Organisms (GMO’s) are raw materials that have been bioengineered to improve crop yields, resist pests or increase nutrient levels. While many crops in North America are grown with GMO seeds, there is a growing interest by consumers to reduce or eliminate GMO’s in their diets.
