Ricotta, Smoked Salmon and Avocado Sliders

  • 1 Ancient Grain Roll
  • 1/2 avocado
  • 2 slices tomato
  • 1 Tbsp ricotta cheese
  • 2 oz smoked salmon (optional)
  • 1/4 cucumber sliced thin
  • 1 tsp chives chopped
  • 1 tsp tarragon chopped
  • Salt and pepper
  1. Set oven to 350 degrees and bake rolls for 5-7 minutes.  Remove and let cool.
  2. Slice roll in half and place on a flat surface. Mix Ricotta with herbs, a pinch of salt and spread on the bottom half of roll. Add cucumber, tomato and avocado. Next, add smoked salmon if you are using and top with chives and micro-greens. Top with other half of roll and serve immediately.
