Huevos Rancheros Panini Toast


You’ll love this unforgettable breakfast sandwich made with simple ingredients but bursting with flavor. Sunny-side up eggs, two salsas, cotija cheese, and roasted corn on grilled Ciabatta is easy to assemble in a hurry.


  • La Brea Bakery Ciabatta Rolls (4x4)
  • Eggs
  • Black beans, cooked
  • Cotija cheese, crumbled
  • Salsa rojo
  • Salsa verde
  • Corn kernels, roasted
  • Pickled jalapeños, sliced
  • Jalapeño-ranch dressing
  • Fresh cilantro



  1. Separate Ciabatta Roll into halves and brush with oil.  Grill until golden in a preheated panini press.
  2. Cook eggs sunny side up. Warm beans and corn.
  3. To build, place the Ciabatta cut side up on a plate and spoon salsa verde on top. Add half the beans and cheese and place the eggs on top. Next, spoon the salsa rojo and jalapeño-ranch dressing on top of the eggs and then top with remaining beans, cheese, and corn. Finish with jalapeños and cilantro.
  4. Serve.
