Warm Vegan Baja Bowl, with Vegan Jalapeno Jack Grilled Cheese Batons

Our Vegan Baja Bowl is a healthy way to enjoy a variety of fresh, bold flavors and textures with a comfy grilled cheese focaccia all in one delicious vegan dish.

Ingredients

  • La Brea Bakery Panini Focaccia Roll
  • Cooked mixed grains (rice, quinoa, buckwheat)
  • Cooked black beans
  • Roasted corn
  • Vegan jalapeno jack cheese
  • Avocado, sliced
  • Salsa
  • Mango, sliced
  • Fresh cilantro
  • Chili lime seasoning

Preparation

  1. Slice the Panini Focaccia Roll crosswise into batons. Brush with olive oil and toast lightly. Next, place toasted batons on a sheet pan cut side up and top each with equal amounts of cheese. Place in the broiler until the cheese is melted. Remove and set aside.
  2. To assemble the bowl: In a low profile, wide-flat bowl, start from the top and in a clockwise direction, plate the ingredients starting with mango, followed by corn, grains, salsa, avocado and black beans. Finish by adding the Panini Focaccia Cheese batons and garnish with cilantro and chili-lime seasoning.
  3. Serve warm.
