French Onion Grilled Cheese with Gruyere and Thick Cut Bacon

A hearty French onion, bacon, grilled cheese sandwich that's as easy to make as it is delicious.

Ingredients
  • Sourdough Baguette
  • 8 slices thick-cut bacon, cooked
  • 1 cup caramelized onions
  • 2 cups gruyere, coarsely grated
Preparation
  1. Preheat oven to 375 degrees.
  2. Slice baguette in half, cut-side up.
  3. Place onions on the bottom slice, followed by cheese and bacon.
  4. Top with the remaining bread slice.
  5. Bake until the cheese is melted, about 3 to 5 minutes.
  6. Remove to a cutting board and cut into 8 pieces.
  7. Serve.

Note: To caramelize onions, use 2 large yellow onions cut into rings, enough for 1 cup. Coat a large skillet with olive oil. Place onions into skillet and sauté over medium heat, stirring frequently. Once they soften and begin to brown, reduce the heat to low. Caramelize slowly, stirring occasionally, until deep brown and very soft, about 40 minutes.
